Mason Casks are a way to truly Oak-Barrel-Age and flavour spirits, cocktails and more in a small volume.

They are quarter-sawn Canadan White Oak caps for Mason Jars that have been toasted and charred just like real casks for a result that actually works just like real casks.

We proudly source Seasoned Canadian Oak from the County Cooperage.

Some samples of the woods I have on-hand including Kingwood (top), Curupau aka Patagonian Rosewood (upper right) Arbutus (bottom left), Maple Burl (bottom center), and Yew (bottom right).

Real Whiskey Casks “breathe” in and out as temperature changes throughout the day, cycling the spirit into and out of the wood, extracting flavourants from the oak & filtering out impurities.

To get the same effect that actually works in a small volume requires 3 principles:

1: The spirit needs to interact with the wood and a small amount of air to achieve breathing

2: The amount of wood surface area to volume of spirit needs to be similar to real casks

3: The wood must be toasted and charred Oak as used in full-size casks

Mason Casks have not officially launched yet but we are working hard to release our introductory batch of our updated Mason Casks with an all-new custom seal and featuring fully seasoned Canadian oak. They Will be available…
